Fried Fresh Peaches

A recipe from “The Best of Shaker Cooking,” revised and expanded by Amy Bess and Persis Fuller.
Number of servings: Serves 4-6 as dessert. Use halves as a side dish.

Ingredients

  • 2 tablespoons butter
  • 6 peaches
  • 12 teaspoons brown sugar
  • Rose water

Instructions

  1. Pare, split, and stone the peaches.
  2. Melt butter in an iron skillet and add the peaches.
  3. Fill the hollows with brown sugar and a drop of rose water.
  4. Simmer until well cooked.
  5. Serve with meats as a garnish or as a dessert with whipped cream or ice cream.
