Herbade (Hancock Shakers)

This is how the Shakers at Hancock Shaker Village made their herbade

Number of servings: Serves 12

Ingredients

  1.  1 1/2 quarts boiling water
  2. 1 cup lemon balm
  3. 2 cups borage
  4. 1 cup mint
  5. juice of 6 lemons, 2 oranges
  6. 1 cup pineapple juice
  7. 1 quart strong tea
  8. Syrup made of 1 cup sugar boiled with 1 cup water
  9. 3 quarts ginger ale

Instructions

  1. Pour 1 1/2 cups boiling water over lemon balm. Steep 20 minutes.
  2. Strain onto borage and mint leaves.
  3. Add fruit juices, tea, and syrup.
  4. Let stand overnight or at least 8 hours.
  5. Strain, add ice and ginger ale and fresh mint leaves at the last moment.
