Pea Roast

Ingredients
- 1 1/2 cups fine dry bread crumbs
- 1 cup peas
- 1 1/2 tablespoons sugar
- 1/2 cup English walnut meats, chopped fine
- 2 eggs, slightly beaten
- 1 teaspoon chopped parsley
- 1 tablespoon chopped chives
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1/2 cup butter, melted
- 1 1/2 cups milk
- 1 tablespoon dried mixed herbs (parsley, basil, marjoram. oregano, thyme, summer savory, tarragon, sage)
- 1 tablespoon powdered sage
Instructions
- Preheat oven to 350 degrees F.
- Cook peas in water to cover and boil 3 minutes.
- Drain and puree in blender, sieve, or processor.
- Add bread crumbs, sugar, nut meats, seasonings, butter, and milk.
- Mix well.
- Line a bread pan with wax paper, fill with the mixture and let stand for 15 minutes.
- Cover with foil and bake for 40 minutes.
- Serve with Cheese Sauce, adding 1 tablespoon powdered sage.
