Herbade (Harvard Shakers)

Shaker recipe
Herbade#2
This is a refreshing beverage from the Harvard Shaker Village.
Number of servings: Serves 16

Ingredients

  • 1/2 cup chopped mint
  • 1/2 cup chopped lemon balm
  • 1/2 cup sugar syrup (or white crème de menthe). Sugar syrup is made by boiling together 2 parts water with 1 part sugar for 5 minutes.
  • 1/4 cup lemon juice
  • 1/2 cup orange juice

Instructions

Combine all ingredients and let stand for 1 hour or more.

If lemon balm is not available, use all mint.

When ready to serve, strain and add 4 quarts of dry ginger ale.

Tips

Members were urged to grow lemon trees “withing doors, as it is much easier than it would seem to be and the fruit can be used for most refreshing beverages.”
