Corn Relish
Shaker recipeNumber of servings: Makes about 4 pints
Ingredients
- 2 cups onions
- 2 cups ripe tomatoes
- 2 cups cucumbers
- 2 cups cut corn
- 2 cups cabbage
- 2 cups sugar
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons celery salt
- 1/2 teaspoon turmeric
- 2 cups cider vinegar
Instructions
- Remove skins from onions and tomatoes and hard ends from cucumbers
- Coarsely chop all vegetables and mix together.
- Combine remaining ingredients and add to vegetables.
- Place all in an enameled, glass or stainless steel saucepan and simmer for 20 minutes.
- Place into hot, sterilized jars immediately and seal.
