Cucumber Salad
Shaker recipeNumber of servings: Serves 6 people
Ingredients
- 2 cucumbers
- 1/2 onion, thinly sliced
- 1/2 cup sour cream
- 1/4 cup cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons sugar
- 1/4 teaspoon mustard
Instructions
- Select tender young cucumbers.
- Cut strips, lengthwise, from the skin.
- Slice thinly and toss with onions.
- Sprinkle with salt and let stand for just three minutes.
- Drain thoroughly, pressing lightly to remove excess liquid.
- Prepare a dressing of sour cream, vinegar and seasonings and pour over vegetables.
- Toss to combine well.
- Serve at once for full flavor.
