Dried Apple Cake
Shaker recipeNumber of servings: Makes 6 servings
Ingredients
- 1 cup dried apples
- 1 cup molasses
- ⅔ cup sour cream
- 1 cup granulated sugar
- 1 egg
- 1 ½ cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- ½ teaspoon cloves or allspice
- ½ teaspoon salt
Instructions
- Place dried apples in a bowl and add cold water to cover.
- Refrigerate overnight, or at least 6 hours
- In the morning, drain, and chop finely on a cutting board.
- Place in a saucepan with molasses, and when it begins to simmer, cook for 20 minutes.
- Cool.
- Combine cream, sugar and egg and beat until smooth.
- Combine remaining ingredients and sift together several times.
- Beat in liquids to dry ingredients until smooth.
- Stir in fruit and molasses mixture.
- Pour into a buttered and floured 8 ¼ “by 4 ½ “loaf pan or equivalent, and bake in a preheated moderate (350F) oven for 1 hour.
Tips
This is a very tasty dessert. Dried apricots or prunes may be substituted for apples to add variety to the menu.
